Brew steps

9 steps
  1. 01

    Heat water

Heat at least 600 g of water, plus extra for rinsing and preheating your filter, to 200–210°F. Darker roasts brew best on the cooler end; lighter roasts benefit from hotter water.

  2. 02

    Grind

Grind your coffee to a medium-coarse consistency.

  3. 03

    Prepare Chemex

Open the Chemex filter so three pleats rest against the spout side and one pleat sits on the opposite side. Rinse thoroughly with hot water, discard rinse water, add ground coffee, and gently shake until the bed is level.

  4. 04Starts at 0:00

    Bloom

Start timer and scale at zero. Beginning in the center, pour in a slow spiral at about 10 g per second until you reach 80 g.

  5. 05Starts at 0:45

    First pour

At 45 seconds, pour from the center in a controlled spiral out to the edge and back until 300 g. Aim to finish this pour at 1:00.

  6. 06Starts at 1:20

    Second pour

At 1:20, repeat the spiral pattern until 400 g; aim to complete by 1:30.

  7. 07Starts at 1:50

    Third pour

    At 1:50, pour until 500 g, finishing around 2:00.

  8. 08Starts at 2:20

    Final pour

At 2:20, bring the total to 600 g; aim to finish this pour at 2:30.

  9. 09Starts at 4:30

    Drawdown

Allow all water to fully draw down. Total brew time should land between 4:30 and 5:30.
